Rock Elm Tavern, a popular Plymouth establishment, has expanded its reach with the grand opening of Holman’s Table at the historic St. Paul Downtown Airport. Co-owners Troy Reding and Brad Sorenson, the driving force behind the successful Rock Elm Tavern, have launched this new venture under their company, Ally Restaurants.

The mid-January opening of Holman’s Table coincided with the Super Bowl, allowing the restaurant to cater to a high-profile clientele of celebrities, executives, and NFL owners. This successful debut solidified Holman’s Table as a unique dining destination. The restaurant’s location in the historic airport terminal adds a nostalgic charm unmatched by their previous ventures, according to Reding. Further expansion plans include a second Rock Elm Tavern location in Maple Grove slated to open this summer. Holman’s Table represents a significant milestone, being the first full-service restaurant in the airport in almost two decades, revitalizing the space after addressing past flooding concerns with a new flood wall system.

A Partnership Built on Friendship and Shared Vision

The foundation of Ally Restaurants lies in the enduring friendship between Reding and Sorenson, which began over twenty years ago. Their shared values, family connections, passion for sports, and appreciation for fine dining and spirits naturally led to their business partnership. Reding’s extensive experience in the restaurant industry, coupled with Sorenson’s financial acumen and business insights, creates a synergistic team. The addition of Liz Bergquist as director of operations further strengthens the company, allowing Reding and Sorenson to focus on strategic growth. While their initial plan included consulting services, the success of Rock Elm Tavern and Holman’s Table has shifted their focus to restaurant operations and expansion.

Holman’s Table, named after the renowned stunt pilot Charles W. “Speed” Holman, offers a distinctive dining atmosphere. The restaurant’s design pays homage to the airport’s early 20th-century architecture, featuring antique brass finishes, soft pink walls, unique ostrich print chairs, exposed industrial ceilings, and original Terrazzo floors. Elevated booths provide stunning views of the runway, creating a memorable experience for guests. With ample free parking, diverse menus, and picturesque views of the Mississippi River and airfields, Holman’s Table appeals to a broad clientele, from business travelers to families and couples. A spacious patio allows for outdoor dining during warmer months, offering a unique perspective of the airport’s activity.

A Culinary Journey: From Grapefruit Brulee to Wild Boar Pappardelle

The New American menu at Holman’s Table emphasizes fresh, high-quality ingredients, refined culinary techniques, and bold flavors.
